Sangsu <Ramen Bar Shikou>. This shop has been open only a month? Within my experience, it has replaced the number-one shoyu ramen in Korea. Singular. The soup is extracted from chicken and duck bones, with several soy sauces blended together. The refined flavor and balance would not feel out of place in central Ginza. Remote waiting through Catch Table is essential.
