Hapjeong <Sowolok>. Thinly sliced pork neck, scallions, chives, and pepper in a concentrated anchovy-based broth. Dried chili adds just enough heat to restrain the strong umami from becoming excessive. The absence of aroma oil makes it a Korean-style hot noodle soup, but its overall grammar clearly seems conscious of ramen. A fusion noodle dish.
