Hapjeong <Hamban>. Hamburger steaks are grilled and served before your eyes: chicken cartilage, pork jowl, then beef short rib. The exceptional attention given to sauces is good, as is the delicate technique of cooking everything to its most appropriate point before serving. It has been a long time since food made me feel this genuinely looked after.
