Sinyongsan <Irochi>. Opened today. Shio ramen with soup extracted from mature hen. It is exceptionally clear, yet the nature of the ingredient concentrates the aroma and gives it depth. With little fat, the salt's character also comes through distinctly. The lingering, mellow flavor is excellent. The noodle portion is generous, and their slightly undercooked texture worked well. Add the ajitama.
