Nonhyeon <Kinka Ramen>. Mushroom shio ramen. A chintan-based soup thickened with paste made from several mushrooms. Salinity is high, amplifying an already abundant and intense umami. Niboshi paitan is the signature, but places using mushrooms this well are rare, making this a must-try.
