Itaewon <Yesterday's Curry>. They say curry tastes better after resting for a day. It is not extraordinary, but I like the deep umami from aging and the gentle sweetness carried by caramelized onions. The loin tonkatsu is cooked nearly well-done yet remains soft and moist, then rested over charcoal for a delicious smoky aroma.
