Gangnam-gu Office <Butano Max>. Tonkotsu shoyu. As the name—Pork Max—suggests, it serves tonkotsu and nothing else. Ramen trends moved away from tonkotsu-centered styles years ago, which makes this thick, direct hit that fills the body from within feel all the more welcome. I left after extra noodles, extra menma, extra egg, and a bowl of rice.
