Narihira <Takesue Tokyo Premium>. Signature hotate soba. It uses slightly thick, medium-width noodles, with scallop paste served over a *tori paitan* soup. Loosen and mix it in little by little toward the latter half. An extravagantly rich taste that stays in the memory for a long time. The truffle cheese rice is mandatory—order it and finish it in the soup.
