Konkuk Univ. <Katsu Onju>. Black-pork loin katsu. If cooking technique is the product of research into how to make an ingredient taste its best, I have rarely eaten meat this delicious in katsu. The flavor deserves to be called beautiful. It is not the melt-away type, and its properly present texture is excellent.
