Seocho-dong <Hoirak Yaki Curry>. Yaki curry is Japanese curry baked in an oven like a gratin. A regional dish of Kitakyushu, it is something I had never seen in Korea. The oven removes more moisture, allowing the curry's flavor to become deeply concentrated. It is made with curry aged for two full days. Delicious.
