Gwanghwamun <Ramen Shimizu>. No break time. Shio and shoyu are both so strong that choosing between them is impossible. The blend of kaeshi in the shoyu is uncanny, with a faint sweet note. The shio is equally clear, clean, and deep—easy for anyone to finish. The chashu is excellent. Choose by preference.
