Yeonnam <Ramen Fighters>. Niboshi paitan. Niboshi ramen is often called aggressive and fishy because of its high salinity and distinctive anchovy character. Combined with paitan, however, much of that force becomes softer without losing abundance. Rarely among the ramen I have eaten recently, this is good.
