Jongno <Canard>. Kamo shoyu ramen. Most places making duck soup refine it extremely and polish the balance into a sophisticated style. Yet pulling it this rich, strong, and slightly rough can be fully delicious too. The finish still falls cleanly. One must allow for the somewhat long service and cooking time.
