Sinyongsan <Bukcheon Tonkatsu>. Brown tonkatsu. It has thick Japanese-style pork, coarse breadcrumbs, and a crisp coating, but the sauce is pure Korean *gyeongyangsik* demi-glace. The lightly spicy finish makes it even better. Tender meat and abundant sauce bring a pleasant fullness afterward. The portion is large.
