Sinchon <Hyodonggak Main Branch>. One of Seoul's three old jajangmyeon institutions. The menu is only jajang, regular or large. For an adult man, large is the proper portion. The noodles are old-style and salt leads the flavor. The quiet sweetness within appears to come from onions and potatoes caramelized to their limit. Open only three hours at lunch. The uncompromising style is enjoyable.
