Sillim <Mipi Day>. Mipi is a local dish from Shanxi, China: rice noodles in the liangpi family. The noodles are mixed with a sauce based on rayu, vinegar, and garlic, then eaten with bean sprouts. Sour, hot, nutty, and gently sweet, it is intensely appetizing. Sesame is added while making the rayu, giving it a softer, nuttier aroma.
