Yeonnam <Hakuten>. Impossible without arriving at opening. It is indeed Seoul's best among places making ie-kei ramen. Salt is pushed to the razor's edge in its role of amplifying flavor and aroma, yet nothing feels missing and the whole bowl is excellent. Recommended order: normal salt, firm noodles, normal oil, plus an egg.
