Anguk <Ilwol Katsu>. Most Japanese-style tonkatsu has improved to such a common standard that it rarely moves me anywhere, but I visited on a recommendation. Its strengths were not so overwhelming as to crush me, yet it may be fair to say there are no weaknesses. Every piece is trimmed and cooked with remarkable delicacy. Can a mass-market restaurant go much further than this?
