The hojicha pecan madeleine was excellent, and when I asked for the item with the most complex flavor and aroma, they brought the Vanille Tonka. Vanilla and tonka bean are folded into ganache montée cream. Delicate and intricate, it continues changing across the palate. A perfect lunch from main course through dessert.
