Gangnam <Daily Fix>. Steak Roll. The patty, made by sous-vide cooking a whole cut of beef plate, has a softness that quite literally seems to melt and disappear in the mouth. The composition is surprisingly simple, but the cooking technique here is clearly at a high level. It made me want to try the other dishes, though getting the chance may not be easy.
