Sangsu <1999 Cordon Bleu>. Katsudon season is over 🥲. I ordered the signature cordon bleu. The cheese was clean with no off smell, while finely chopped mushrooms, bell pepper, and other vegetables filled the inside; the flavor bursting together with the cheese was excellent. They seem to trial quite a few new dishes, and do not look content to stand still.
