Gyodae <Antique>. Vanille Velouté, Rose Coco, and Apple Mint Pavlova. The Vanille Velouté had such orthodox structure and flavor that “classic” is the natural description, while the latter two were more experimental in texture. Everyone at the table responded to the pavlova with, “This is fun.” There is a reason it has survived so long in this location.
