Gasan <Machida Shoten>. Iekei ramen. It seems difficult to make something this rich taste this clean and free of stray flavors. That cleanliness may be a drawback for some, but in this bowl it works more powerfully as the quality that brings you back. It uses the same house-made durum-wheat noodles as the shop next door, Ganso Aburado. Delicious.
